1、 The structural composition and working principle of the smoking furnace:

The upper part is equipped with a fan and copper coil tube. The function of the fan is to spread the hot air and smoke sucked up by the motor, achieving a uniform effect. Copper has good thermal conductivity, fast heat transfer speed, and increases contact space, resulting in faster heating speed and energy saving. The electric heating tube is located on both sides, with a fast heating rate and uniform heating. Two temperature probes, one measuring the temperature inside the furnace and the other measuring the temperature of the food, help us determine the aging status of the product based on its appearance. There are independent flues on both sides of the furnace, with exhaust and smoke outlets on the upper part and steam convection ports on the side. The purpose is to ensure consistent temperature and smoke inside the furnace, avoiding inconsistent temperature and smoke color. There is a drainage outlet at the bottom of the furnace to remove water droplets formed by condensation of steam when cooled. And equipped with a filter plate: it can effectively prevent harmful substances such as solid small particles and tar generated during smoking from adhering to the surface of the product.

2、 Types of smoking ovens:

Category 1: It can be divided into two types based on the degree of automation: fully automatic and semi-automatic. The fully automatic smoking furnace adopts PLC automatic programmable control, with a large window human-machine interface that vividly and intuitively displays the operating status of the equipment. The state parameters such as time, temperature, humidity, and exhaust size can be adjusted at any time during operation, and the operation is very simple. The drying, steaming, and smoking processes can be automatically switched according to the set time, the temperature can be automatically adjusted according to the set value, and the end of the process will be automatically displayed; When the work is completed or the machine malfunctions midway, it will automatically sound an alarm. The semi-automatic smoking furnace can use imported or domestically produced electrical components according to customer requirements, saving purchasing costs.

Category 2: From the heating source, it can be divided into two types: steam heating and electric heating. Using steam heating, it is generally suitable for users with boilers or steam generators. Electric heating is the use of electric heating tubes to achieve drying, smoking, and coloring.

Category 3: Smoke generator devices can be divided into two types: built-in smoke generators and external smoke generators. The built-in one is a smoking box with an electric heating tube, and the external one is a fully functional smoking stove.
